Introducing The Dock: A Limited Edition Coffee with a Baytown Twist

We’re back with another coffee launch – and this one is as bold, bright, and full of character as Robin Hood’s Bay itself. Meet The Dock, our brand-new limited-edition coffee.

Just like all our Baytown coffees, this one’s got a story to tell. We always say coffee tastes better when you know where it’s come from, and The Dock is no exception.

From Colombia to the Bay

Our beans come from El Nido farm in La Unión, Nariño, Colombia, lovingly grown and processed by Kenedy Lopez Ceron and his team. At 1,800–1,850 metres above sea level, the conditions are spot on for producing bright, complex coffees.

Kenedy and his crew are serious about quality – they hand-pick only the ripest cherries, sort them carefully, and then give them a 30-hour underwater fermentation. Sounds technical (and it is), but in plain English it means this coffee develops a juicy sweetness and lively acidity that sings in the cup.

Once fermented, the cherries are pulped, washed, and dried slowly in parabolic dryers, where Kenedy keeps a keen eye to make sure everything is just right. The result? A coffee that’s smooth, sweet, and perfectly balanced.

What It Tastes Like

If you’re into flavour notes (and we know some of you are), you’ll find:

  • Nectarine – juicy and bright

  • Orange – zesty and refreshing

  • Caramel – sweet and smooth

It’s a washed coffee, medium roast, and shines brewed as an espresso or as a pour over. With milk, it’s like sipping a caramel orange latte. Without milk, it’s crisp, fruity, and complex.

Why “The Dock”?

We’ve got a bit of a tradition here at Baytown – most of our coffees are named after streets or places in our beloved Robin Hood’s Bay. This time, we threw it out to our trusty friends on Facebook and Instagram to help us pick. As always, you didn’t let us down.

The Docks won by a landslide – and we love it. The name ties back to a quaint little cottage in the Bay called The Dock, and as luck (or fate) would have it, the owners got in touch with us just as we were dreaming up this launch. Talk about timing! We’re even heading down there to film the launch on the steps so you can see the place that inspired the name.

And yes – we’ve matched the label with a lovely teal colour that looks right at home against the sea wall in the Bay.

A Bit About the Variety

For the coffee nerds (we see you), this one’s a Variedad Colombia. Developed back in the 1980s by Cenicafé, it was bred to be more resistant to diseases like coffee leaf rust while still delivering a cracking cup. Thanks to its resilience and quality, it’s become a staple for many Colombian farmers, helping them keep their farms sustainable and their coffee delicious.
