We are so excited to announce the much-anticipated return of King Street, our beloved summer guest coffee. This bright, lively, single-origin light roast from Kenya is back!
Grown by Acacias Members from six cooperative societies, King Street boasts the prestigious AA grade, a testament to the superior size and quality of its beans. The grading process involves sifting green coffee beans through cascading layers of sieves, each with decreasing sizes, until only the finest beans are selected. The AA grade makes this some of the finest coffee in the world.
Kenyan coffee is also known for its vibrant acidity and crisp, fresh taste. King Street is no exception with its delicious fruity tasting notes of pineapple and red berries, and hints of strawberries and cream at the finish. It’s one of the Baytown teams favourites so we’ve all been eagerly awaiting its return!
With summer just around the corner, our head roaster, David, and Rachel have been busy experimenting with different iced drinks to find our favourites. We found King Street makes for a great espresso tonic, so here’s how you can try it for yourself and make this fabulous recipe at home!
What you’ll need:
- Glass
- Ice
- Tonic Water (150ml)
- Double-shot espresso (36ml)
- Scales
For the espresso:
- Weigh out 18g of coffee – we recommend using King Street!
- Grind the coffee to fine consistency.
- Put your coffee into the portafilter and tamp evenly with a medium-hard pressure – make sure the coffee is flat and level for an even extraction.
- Insert the portafilter and begin extraction – the espresso should look thick and creamy as it begins to extract.
- Make sure your overall extraction time is 28 seconds, with the weight of espresso being 36g. Any faster or slower and your grind size will need to be adjusted.
Combining your ingredients:
- Fill your glass three quarters full of ice
- Add 250ml tonic water
- Top up your drink with your double espresso - just make sure to leave your espresso to cool slightly first.
- If you’re using a stronger tonic, we think this drink stands great on its own, but if you use a light tonic, we recommend adding a slice of lime to enhance your drink!
